Ingredients for Crispy Tofu Soba Stir Fry
To make this recipe we will need to gather the following ingredients:
- Extra-firm tofu – The hearty protein base; pressing removes water so it crisps beautifully and holds onto the marinade.
- Soy sauce (or tamari) for tofu – Seasons the tofu from the inside and adds deep umami flavor.
- Rice vinegar (or lime juice) for tofu – Adds brightness and balance, cutting through the richness of sesame oil and sauce.
- Sesame oil for tofu – Brings nutty, toasty flavor that makes the tofu taste “stir-fry restaurant” good.
- Ginger – Adds warm, fresh zing that lifts the whole dish.
- Garlic – Provides bold, savory aroma and classic stir-fry flavor.
- Cornstarch (for tofu) – Creates that light, crispy coating in the air fryer and helps the tofu stay crunchy longer.
- Cooking spray or neutral oil (for crisping) – Promotes browning and crunch in the air fryer without deep frying.
- Soba noodles – A slightly nutty, chewy noodle that soaks up sauce while still feeling light.
- Neutral oil (for stir frying) – Handles high heat so the veggies sauté quickly without burning.
- Onion – Adds sweetness and depth as it softens and caramelizes slightly.
- Broccoli – Brings crunch, color, and a hearty bite that pairs well with the sauce.
- Celery – Adds extra crunch and a fresh, savory backbone that keeps the stir fry from feeling heavy.
- Soy sauce (or tamari) for stir fry sauce – The salty-umami foundation of the sauce that ties everything together.
- Water – Loosens the sauce so it coats evenly instead of becoming too intense or salty.
- Rice vinegar (in sauce) – Brightens and balances the sweetness and soy.
- Honey/brown sugar (or maple) – Adds a touch of sweetness for that classic glossy stir-fry balance.
- Sesame oil (in sauce) – Adds depth and a rich, nutty finish.
- Cornstarch (in sauce) – Thickens the sauce so it becomes shiny and clings to noodles and veggies.
- Soy sauce (for spicy drizzle) – Adds an extra punch of salty umami right at the end.
- Sriracha or chili garlic sauce – Brings heat and a spicy kick you can adjust to taste.
- Rice vinegar (optional, for drizzle) – Adds a pop of brightness that keeps the finish lively and not too heavy.
- Sesame seeds – Add nutty crunch and a finished, restaurant-style look.
- Green onions (optional) – Add fresh bite and color that brightens every bowl.
Step-by-Step Crispy Tofu Stir Fry
After gathering our ingredients, we will use the following process:
Cut and Dry Tofu
Cut tofu into small squares and thoroughly pat dry with paper towel, squeezing out excess moisture – but carefully, so it does not crumble.
Marinate Tofu
Whisk stir fry sauce in a bowl and pour over tofu. Let marinate 10-30 minutes.
Toss in Cornstarch
Toss, or dredge, in cornstarch.
Air Fry
Air fry tofu to crispy.
Stir Fry
Add broccoli, onion, and tofu and toss to cook to soft.
Add Noodles
Cook soba noodles to package instructions until soft. Drain and add to pan with vegetables, sauce, and tofu. Toss and top with spicy soy.
Serve & Enjoy
After noodles have been coated in sauce, top with sesame seeds (black or white) and, optional, scallions or chives. Serve and enjoy!
Crispy Tofu Soba Stir Fry Tips & Tricks
Press tofu well. Drier tofu = crispier tofu. Even 10–15 minutes helps a lot.
Cornstarch is the crunch secret. A light dusting gives you that crispy shell without deep frying.
Don't skip rinsing soba. Rinsing stops cooking and keeps noodles from turning gummy in the pan.
Cook veggies until crisp-tender. That crunch balances the soft noodles and crispy tofu.
Toss noodles gently. Soba can break if you stir too aggressively — use tongs if you can.
Add tofu last (or on top). Folding it in is fine, but piling it on top keeps the crunchiest texture.
Spicy soy drizzle = instant upgrade. Add a little at a time so you control the heat and salt.

Do we have to press the tofu?Yes — it's the easiest way to get crispy tofu. Removing water helps it brown and crisp instead of steaming.
Can we use frozen tofu?Yes. Thaw, squeeze out extra water, and proceed. Frozen tofu gets extra spongy and absorbs marinade well.
What soba noodles should we use?Any soba works, but 100% buckwheat soba has the most nutty flavor. Cook carefully so it doesn't over-soften.
How do we keep soba noodles from sticking?Rinse after cooking and toss with a tiny splash of oil before adding to the skillet.
Can we make this gluten free?Yes – use tamari and choose 100% buckwheat soba (check labels, some have wheat).
Can we meal prep this recipe?Yes. Store tofu separately if possible so it stays crisp longer. Reheat noodles in a skillet and add tofu at the end.
