How to Make Shortcut Millionaires Bars

Millionaire Shortbread Ingredients

First, assemble the following ingredients:

  • Shortbread cookies, (40, square) – square shortbreads are the solid base for these cookies, so simple!
  • Chewy caramels (20) – pre-made square caramels are nice and easy for these shortbread cookies.
  • Chocolate melting wafers (2 cups) – simple wafers melt easily in a double broiler or the microwave and coat smoothly.

Steps for Millionaire Shortbread Bites

Once you have assembled the ingredients, use this method:

Prep

Preheat the oven to 325 degrees F and line a baking sheet with parchment paper.

Place Caramels

Place the shortbread cookies on the baking sheet at least ¼ inch apart. Slice the caramels in half and place a half on each of the shortbread cookies.

Bake

Bake for 6 to 8 minutes until the caramels have melted. Remove from the oven and allow to cool, about 20 minutes.

Coat in Chocolate

Once the caramel is hardened enough that you can touch it without it being sticky, microwave the chocolate melting wafers in a medium bowl on 30-second intervals until melted. Drop the cookies caramel side down in the chocolate then use a fork to gently flip them and scoop them out of the bowl, scraping off any excess chocolate before placing them back on the baking sheet to set.

Decorate

Repeat with all cookies and top with sprinkles or sea salt before the chocolate hardens. Store in an airtight container at room temperature for up to 1 week.

Kitchen notes

How to Melt Chocolate. Using a double boiler (or a small pan, nested into a larger pan with water in it), add chocolate and bring the water in the bottom pan to a boil, stirring the chocolate as it melts.

Soft Caramel Method. If you want slightly smoother and softer caramel, you can add 1 tablespoon of heavy cream when melting the caramel – whisk in vigorously. This method doesn't require baking – so it does save a bit of time – but is more hands on since you'll then pour the caramel onto each cookie.

Microwave Chocolate Method. Microwave chocolate or chocolate wafers in 30 second bursts, and stir in between each burst, to prevent chocolate from burning. Often chocolate melts around the bottom and the sides – and will burn if microwaved again – when a simple stir could've melted the remaining solid chocolate.
