About Peach Bellini Cocktails
Peach Bellini cocktails aren't sweet and bubbly – they were originally created in Venice, at Harry's Bar, by legendary bartender Giuseppe Cipriani in 1948.
You can still visit Harry's Bar, at the Cipriani Venice, which became an historical landmark in 2001.
As for Bellinis themselves, they are a delightful combination of peach puree and brut sparkling wine – light and sweet, bubbly, bright, and always a favorite for brunch!
- Makes a great bridal shower or party drink – easy to serve and mix!
- Can be made non alcoholic – swap alcohol with a Dry soda.
- Peach flavor is light and refreshing – and totally addictive!
- We're going to show you how to use either CANNED or FRESH peaches, so you don't have to worry about what season you're in – get ready to enjoy a good drink!

What is a Peach Bellini Cocktail
Peach Bellini Cocktails are one of our favorite brunch cocktails – they are light, sweet, and full of bubbly peach flavor.
A bellini is similar to a mimosa – it combines brut (dry) sparkling wine and peach puree or peach nectar for a simple, light, and refreshing cocktail.
Mimosas are made with orange juice, while bellinis are made with peach – which gives them a sweeter, lighter, and less acidic flavor.
Traditionally, you would use a dry, fine Prosecco in a Bellini (even better if it is from the Veneto region, where Bellinis originate), but any dry sparkling wine, including champagne, work wonderfully.
Peach Bellini Cocktail Ingredients
To make peach Bellinis, there are a couple of choices you can make as far as what you use as your cocktail base.
Canned Peach Bellinis
If you'd like to use canned peaches, we recommend peaches in water, not syrup.
The syrup will be too sweet in the Bellini – so don't add additional sugar if you can only use peaches in syrup.
Drain canned peaches fully before using.
Fresh Peach Bellinis
This drink can be made with fresh or fresh-frozen peaches – either works fine!
If using fresh peaches, remove peach skins, as they can give off a bit of an earthy, funky flavor when mixed with alcohol. We love peach skins – but prefer to remove before mixing into drinks.
For frozen peaches, opt for peaches without added sugar.
Let thaw – we like them to still be icy cold, but without ice chunks, so they can blend to be velvety smooth.
What Sparkling Wine To Use For Bellini Cocktail
If you're going for a traditional peach bellini cocktail recipe, reach for a Veneto Brut Prosecco.
Prosecco is an Italian DOC or DOCG white wine – meaning the name is protected by European Economic laws, so only wines containing specific grapes grown in certain regions and produced in a specific way can be called Prosecco.
Veneto is the winemaking region around Venice, Italy – and home to Prosecco. For a wine to legally be called Prosecco, it must be produced in a large area spanning nine provinces in the Veneto and Friuli Venezia Giulia regions of Northern Italy, near Venice.
Brut, when talking about wine, is the French term essentially for “dry” – meaning it isn't sweet. Since peach puree is already pretty sweet, you want to be sure the wine you're grabbing isn't overly sugary tasting for a solid balance!
Our favorite Prosecco picks:
- Mionetto Brut Prosecco (about $12)
- Sentio Prosecco Brut NV (about $14)
- Bottega Prosecco Gold Brut (about $35)
Non-Prosecco Picks:
- Segura Viudas Cava, Brut (around $15)
- Veuve Clicquot Champagne Brut (fabulously expensive for a cocktail at around $60 a bottle, but our absolute favorite Champagne to sip)
- Domaine Laurier Brut Methode Champenoise Champagne (about $12 – Methode Champenoise means it is a sparkling wine made from Champagne grapes, made in the same method of Champagne, but grown outside of the Champagne region of France – usually California.)
What Non Alcoholic Mixers To Use For Peach Bellinis
If you want to make a non alcoholic peach Bellini, please find some of our suggestions below – use a 1:1 swap for sparkling wine instead of the alcohol for a virgin peach Bellini cocktail.
- Sparkling white grape juice – if you can find a lightly sweetened brand, that is best.
- Club soda
- Sparkling cider
- Ginger ale
- Sprite Zero or Diet lemon-lime soda (regular works too, but we like the less sweet options for a closer to the original flavor.)
How To Make Peach Bellinis
Making peach bellini cocktails are incredibly easy – blend, mix, and drink – but we're going to break down every step so it is incredibly simple, so you have the solid drink, every time.
- Add the peaches, simple syrup, peach nectar and lemon juice to a large blender and blend until smooth.
- If you want to make a big batch, or save puree for later, you can store puree here in a jar with a tight fitting lid in the refrigerator, for up to four days.
- Pour 1/4 to 1/2 of a glass full of the peach mix, and top with prosecco.
- Lightly stir.
- Serve and garnish with fresh mint leaves, and a fresh peach slice if you'd like!
Kitchen notes
Can we pre-make bellinis? While you can make the peach base up to four days ahead (store in the refrigerator in a jar with a tight fitting lid), don't pour the champagne until ready to drink, or you will lose all the bubbles!
Where Did Peach Bellinis Originate?Peach Bellini cocktails were originally made in Harry's Bar in Venice, Italy, by Giuseppe Cipriani in 1948.
Can we use frozen peaches in peach bellinis? We love using frozen peaches in bellinis – we half thaw them before blending, which gives the cocktail a nice icy temperature without an overly slushy texture.
Can we use a different sparkling wine?Peach Bellinis are traditionally made with Prosecco, but you can use any dry sparkling wine. If you're going for something traditional, grab a Brut Veneto varietal.
