Roasted Carrots Questions, Answered

Can we use baby carrots?

Yes, but whole carrots cut into sticks roast more evenly and develop better flavor.

Why are our carrots not caramelizing?

They may be overcrowded or the oven temperature is too low. Use a single layer and high heat.

Can we make this ahead of time?

They're best fresh, but can be reheated in the oven to restore texture.

What herbs work well with this recipe?

Parsley, thyme, or rosemary all pair beautifully with garlic and Parmesan.

Can we make this dairy free?

Yes — omit the Parmesan or use a dairy-free alternative.

Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried Italian seasoning, optional
