Peppermint Crunch Andes Candies Fudge is an easy, microwaveable fudge that is suited to the holidays! Great as teacher, friend, and neighbor gifts!
At Avdaye, we add lots of tips in all of our recipes – because we are a home cook without any formal training, and we find we are more confident making dishes when we understand why it works, and what each ingredient means to the flavor of a recipe. Our goal is for even the most beginner home cook to feel empowered in the kitchen.
Minty Andes Candy Fudge
There are certain candies everyone remembers as kids. For us, we can remember getting Andes mints clearly at special events- visiting family members, after a nice dinner- they were always something from a great night.
We were recently making up a ton of fudge for friend and teacher gifts, and we stumbled across some good looking peppermint crunch Andes- and knew we needed to make something with them!
We are using a simple, microwaveable vanilla fudge recipe as a solid base for these good pepperminty treats. They are suited to Christmas- and look as beautiful as they taste!
Fudge is one of our hands down favorite gifts to give- it is quick, tasty, and easy- and this version is incredibly simple. The hands-on time is less than 5 minutes- and it sets in the fridge or freezer in less than 2 hours.
It's great for people who have huge Christmas lists and lots of people to give gifts to this year- pop them into a cute bag or box- or even in a decked out mason jar with some cute decorative accents (we grabbed Jar Bling from Joann Fabric and Craft Stores- it makes a perfectly festive present!!)
Kitchen notes
Quality Ingredients: Start with high-quality chocolate and pure peppermint extract for the best flavor.
Smooth Texture: To ensure a smooth and creamy texture, use sweetened condensed milk or heavy cream as the base. Avoid using low-fat or non-fat ingredients.
Use a Candy Thermometer: Fudge can be finicky. Cooking it to the right temperature (typically between 234°F and 240°F or 112°C to 115°C) ensures it sets properly.
Consistent Heat: Cook the fudge on medium heat rather than high to avoid burning. Stir constantly to prevent the mixture from sticking to the bottom of the pan.
Line Your Pan: Use parchment paper or aluminum foil to line your pan. This makes it easier to lift the fudge out and cut it into squares.
Chill Before Cutting: Once you pour the fudge into the pan, allow it to cool at room temperature for a bit. Then, place it in the refrigerator to set before cutting. This helps in achieving clean edges.
Crushed Peppermint: Sprinkle crushed peppermint candies or candy canes on top for added texture and flavor. Press them slightly into the top so they adhere.
Store Properly: Fudge can become too soft or too hard if not stored properly. Keep it in an airtight container at room temperature if you'll be eating it within a week, otherwise, refrigerate it. Always avoid storing in humid areas.
Don't Rush: Making fudge requires patience. If you try to rush the process by increasing the heat, you risk burning or ruining the texture.
Experiment with Layers: For a visually appealing fudge, consider layering plain chocolate fudge with peppermint fudge.
Keep Utensils Dry: When working with chocolate, even a small amount of water can cause it to seize, leading to a grainy texture. Ensure all your utensils are dry.
Fine Salt: If adding salt, use fine sea salt or kosher salt. This will ensure even distribution and enhance the flavor without overpowering it.
Creamy Finish: If you like creamier fudge, consider adding a bit of unsalted butter to the mixture.
A few answers
Our fudge didn't set. What can we do?If your fudge is too soft, you can melt it down again, cook it a bit longer (using a candy thermometer to reach the soft ball stage), then pour and set again.
Can we add other ingredients to our peppermint fudge?Absolutely! Consider adding nuts, chocolate chips, or swirls of white chocolate for variation.
How do we prevent our fudge from drying out?Store it in an airtight container. If refrigerating, bring it to room temperature before serving to ensure the best texture.
Why is our fudge grainy?Graininess can occur if the sugar isn't fully dissolved or if the mixture is overcooked. Always stir thoroughly and consider using a candy thermometer.
Can we use fresh mint instead of peppermint extract? While fresh mint gives a different flavor profile, you can infuse the cream or condensed milk with mint leaves for a natural mint flavor. However, for the classic peppermint taste, peppermint extract is recommended.
How do we store peppermint fudge?Store it in an airtight container at room temperature for up to a week. For longer storage, refrigerate or freeze it, separating layers with parchment paper.
Is there a difference between peppermint extract and mint extract?Yes, peppermint extract has a stronger, more pungent flavor typical of candy canes, while mint extract can be a blend of spearmint and peppermint, resulting in a milder flavor.
