Sirloin Steak Bites with Onions Recipe Ingredients

To make this recipe, we will need the following ingredients:

  • Butter (to sear and sauce): Adds rich, creamy flavor and helps create a golden crust on the steak. Also forms the base for the garlic herb sauce.
  • Sirloin steaks (cut into bites): A lean, flavorful cut that stays tender when seared quickly. Bite-sized pieces cook fast and absorb flavor well.
  • Onion: Adds natural sweetness and depth as it caramelizes. Balances the richness of the steak and butter.
  • Italian herb seasoning: A savory mix of herbs like oregano, basil, thyme, and rosemary — brings earthy, aromatic notes that pair beautifully with beef.
  • Salt and pepper: Essential for enhancing all the other flavors and building a balanced, well-seasoned steak.
  • Garlic: Adds bold, aromatic depth and infuses the butter with a warm, savory kick.
  • Stock (to deglaze): Loosens browned bits from the pan (aka flavor gold!) and adds moisture and body to the sauce. Beef or chicken stock both work well.
  • Worcestershire sauce: A punch of umami that deepens the savory flavor of the steak and adds complexity to the sauce.
  • Chives and green onions (to garnish): Add a fresh, bright finish and a pop of color to balance the richness of the dish.

Steps to Make Sirloin Steak Tips with Onions

Once you've gathered your ingredients, we will use the following process:

Cut & Season

Cut steak bites into chunks and season generously with salt and pepper.

Sear

Add to hot, heavy pan.

Add Onions

Add onions to pan and stir to prevent burning, but dont chase too much around the pan – let steak and onion brown.

Deglaze

Add bit of wine or stock to deglaze pan, and add garlic butter to finish.

Serve & Enjoy!

Serve garnished with chives or scallions, and enjoy!

Kitchen notes

Pat steak dry before cooking – Moisture prevents browning. Dry steak = better sear and flavor.

Use a hot pan – Preheat your skillet until it's about smoking. A hot pan gives those golden, caramelized edges you want.

Cook in batches if needed – Don't overcrowd the pan. Too much steak at once = steaming, not searing.

Don't skip the rest – Let steak tips rest for 5 minutes before serving so the juices stay in the meat.

Use real butter – For rich, velvety flavor, use high-quality butter — and don't be shy with it.

Add garlic and herbs at the end – To avoid burning, stir in garlic and Italian herbs with the butter once the steak is nearly done.

Deglaze for extra flavor – After cooking, splash in a bit of beef broth, wine, or even balsamic to loosen all the flavorful bits from the pan.

Sirloin Steak Tips Recipe FAQs

What cut of steak is best for steak tips?

Sirloin is a top choice — it's lean, flavorful, and cooks quickly. You can also use ribeye or tenderloin if you're feeling fancy.

Do we need to marinate steak tips?

Not for this recipe! The garlic butter, onions, and herbs bring all the flavor you need. But if you want to marinate, even 30 minutes in olive oil, Worcestershire, and garlic works great.

Can we use dried herbs instead of fresh?

Absolutely. Use 1–2 teaspoons of dried Italian herbs if you don't have fresh — add them when you add the garlic so they bloom in the butter.

Whats the best pan for steak tips?

A cast iron skillet gives the best crust and even cooking. Stainless steel works too — avoid nonstick if you want a good sear.

How do we know when Steak Tips are done?

For medium-rare, pull them off the heat at 130–135°F. They'll continue to cook a little as they rest.

Can we make this ahead of time?

Steak tips are best fresh, but leftovers reheat well! Store in an airtight container and reheat quickly in a skillet or microwave with a splash of broth or butter.

Ingredients

  • 2 tablespoons butter, plus more if needed
  • 2 sirloin steaks, cut into bite-sized pieces
  • 1 medium onion, sliced
  • 3 –4 cloves garlic, minced
  • 1 teaspoon Italian herb seasoning
  • Salt and freshly ground black pepper, to taste
  • ¼ cup beef or chicken stock, for deglazing
  • 1 tablespoon Worcestershire sauce
  • Chopped chives or green onions, for garnish (optional)

Method

  1. Pat steak dry with paper towels. Season generously with salt, pepper, and Italian seasoning.
  2. Heat 1 tablespoon butter in a large skillet over medium-high heat. Add steak tips in a single layer (work in batches if needed). Sear 2–3 minutes per side until browned and cooked through. Remove and set aside.
  3. In the same pan, add another tablespoon of butter. Add onions and cook until softened and lightly golden, about 3–4 minutes. Stir in garlic and cook 1 minute more.
  4. Pour in stock and Worcestershire sauce, scraping up any browned bits. Simmer 1–2 minutes to slightly reduce.
  5. Add steak tips back into the pan. Toss everything to coat in the buttery sauce. Taste and adjust seasoning if needed.
  6. Remove from heat and sprinkle with chives or green onions. Serve hot with your favorite sides.
