How to Make Air Fryer Pumpkin Butter Cookies:

To make this recipe, you'll need:

  • Instant Pot with Broiler Lid or Ninja Foodi
  • Parchment Paper
  • Mixing Bowls
  • Fork
  • 1/4 cup pumpkin puree
  • 1/2 cup pumpkin butter
  • 1/2 cup butter
  • 2 3/4 cup flour
  • 1 tbsp pumpkin spice
  • 1 tsp baking soda
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup butterscotch morsels
  • 1 tbsp powdered sugar

Kitchen notes

Baking cookies in an instant pot or ninja foodi – using the bake function with the broiler lid – is incredibly easy, but there are a couple steps you can take to make it even easier!

When using the broiler lid on an instant pot or ninja foodi, you're turning your machine into a convection oven.

The air circulates around cookies to bake like in a convection oven – without heating up the whole house!

Suited to small batches. Baking in an Instant Pot is admittedly not the best for making big batches – but is suited to when the craving hits and you want a few cookies to hit the spot.

Keep cookie dough on hand. We personally recommend making up a big batch of this cookie dough and keeping in the fridge, so you can bake cookies in a flash anytime you want to indulge!
