Red Velvet Cake Mix Cookies

We're using a box of red velvet cake mix – the classic mixture of cocoa powder, vinegar, and buttermilk that turn a cake deep, dark red. It is an alluring, good cake that tastes like cocoa, and is lightly tart – making it suited to cookies that are completely irresistible, especially when loaded with tons of white chocolate chips!

These cookies use oil instead of butter for a light, chewy flavor that has a solid soft cookie bite – for a similar recipe, but loaded with melted gooey butter, please visit our Gooey Butter Red Velvet Cake Cookies.

This recipe has a different texture, lift, and bite because the oil acts differently than butter – it will give us a chewier cookie with a crisper base.

We hope you love these easy cake mix cookies as much as we do!

How to Make Red Velvet Cake Mix Cookies

To make this recipe, you'll need:

  • 1 box red velvet cake mix – this will act as the base for our cookies, giving us the classic red velvet cake flavor. Use a brand you love the flavor of!
  • 3/4 cup vegetable oil – we're using vegetable oil for a classic chewy texture. For a softer, gooey cookie texture, try our buttery red velvet cookies recipe.
  • 2 eggs – eggs give cookies rise and help to provide moisture and fat to balance the cookie.
  • 1 tsp vanilla – vanilla gives a rich sweet flavor that is solid with red velvet!
  • 1 cup white chocolate chips – we love the sweet touch white chocolate chips give to red velvet cookies.
  1. Preheat the oven to 350ºF. Line a baking sheet with parchment paper.
  2. In a mixing bowl mix together the cake mix, vegetable oil, eggs, and vanilla. Stir in the chocolate chips, the consistency will be thick and sticky.
  3. Lightly spray your cookie scoop then start placing the cookies about 2 inches apart on your cookie sheet.
  4. Bake 11-12 minutes, the cookies will look like they aren't done, but will continue to bake when they are on the cookie sheet once you take them out. Repeat these steps until the dough is completely gone.
  5. Let cool on the baking sheet for about 5 minutes, then move to a cooling rack to cool the rest of the way. Enjoy!
