How to Make Balsamic Chicken

First assemble the following ingredients:

  • Prosciutto (8 oz) – Adds a salty, umami-rich depth and a subtle crispness that complements the tender chicken.
  • Boneless chicken breasts (1 1/2 lbs) – Serve as the lean, mild base of the dish, offering a solid canvas for the balsamic glaze.
  • Sea salt and pepper – Provide essential seasoning that enhances the natural flavors of the chicken and vegetables.
  • Olive Oil (2 tablespoons) – Used for sautéing, it imparts a fruity richness that adds to the overall depth of the dish.
  • Garlic (8) – Infuses the dish with a pungent, aromatic flavor that deepens the savory profile of the sauce.
  • Mushrooms (1 lb) – Contribute an earthy, meaty texture and absorb the sauce's flavors, adding complexity to the dish.
  • Chicken broth (3/4 cup) – Adds moisture and a rich, savory background that enhances the sauce and keeps the chicken tender.
  • Bay leaf (1) – Offers a subtle, herbal undertone that complements the balsamic and herbs, adding layers to the dish's aroma.
  • Dried thyme (1 teaspoon) – Provides a slight minty, lemony note that brightens the dish and pairs well with the balsamic.
  • Parmigiano Reggiano (¼ cup) – Brings a nutty, salty finish that elevates the dish with a touch of Italian flair.
  • Balsamic Vinegar (1/3 cup) – The star ingredient, it creates a tangy, slightly sweet glaze that beautifully coats the chicken, offering a burst of vibrant flavor.

Use this Method:

Cook Prosciutto. In a large, heavy skillet, crisp prosciutto over medium heat. Do not drain off any oil. Remove crispy prosciutto, dice it up and place in small bowl, set aside.

Cook Chicken. Season chicken generously with salt and pepper. Add olive oil to pan and heat until light and shimmery. Add chicken to pan, browning each side – about 5 minutes per side.

Add Veg. Add mushrooms, garlic, and diced prosciutto to pan, stir. Let cook down until mushrooms are soft and garlic is fragrant.

Make Sauce. Drizzle chicken with balsamic vinegar. Add stock to pan and bring to a boil. Stir up any browned bits that were stuck to the bottom of the pan. Add herbs to pan. Let chicken, mushrooms, garlic and stock cook until chicken has reached internal temperature of 160 degrees and stock has reduced.

Finish and Garnish. When chicken is cooked, shave parmesan cheese over the top. Serve immediately.

Kitchen notes

Use Quality Balsamic Vinegar: Investing in a good balsamic vinegar can significantly enhance the flavor of your glaze.

Properly Season the Chicken: Season both sides of the chicken breasts with salt and pepper before cooking to ensure they are flavorful.

Achieve a Good Sear: Make sure your skillet is hot before adding the chicken to get a nice, golden-brown sear on each side.

Don't Overcrowd the Pan: Cook the chicken in batches if necessary to ensure each piece has enough space to sear properly.

Let the Chicken Rest: After cooking, let the chicken rest for a few minutes before slicing to keep it juicy.

Reduce the Balsamic Glaze on Low Heat: Simmer the balsamic vinegar on low heat to thicken it into a glaze without burning it.

Add Aromatics: Infuse the balsamic glaze with garlic, herbs, or shallots for added depth of flavor.

Deglaze the Pan: Use the balsamic vinegar to deglaze the pan and incorporate the browned bits from the chicken into the glaze for more flavor.

Adjust Sweetness: If the glaze is too tangy, add a touch of honey or brown sugar to balance the flavors.

Serve with Garnishes: Top the dish with fresh herbs like basil or thyme, or a sprinkle of Parmesan cheese for an extra flavor boost.

A few answers

What type of chicken is best for this recipe?

Boneless, skinless chicken breasts or thighs work well; breasts for a leaner option and thighs for more flavor and moisture.

Can we use any type of mushrooms?

Yes, you can use a variety like button, cremini, or portobello. Each type will add a unique flavor and texture.

How do we prevent the chicken from drying out?

Avoid overcooking by using a meat thermometer to check for doneness (165°F for chicken) and letting the chicken rest before serving.

Can we make this dish dairy-free?

Yes, omit the Parmesan cheese or substitute it with a dairy-free alternative.

How can we add more flavor to the dish?

Sauté garlic or shallots with the mushrooms, add fresh herbs like thyme or rosemary, and finish with a sprinkle of fresh Parmesan and a drizzle of good quality olive oil.

Can this dish be made in advance?

While best served fresh, you can cook the chicken and mushrooms ahead of time and reheat gently, adding fresh Parmesan before serving.

How do we store leftovers?

Store in an airtight container in the refrigerator for up to 3 days. Reheat gently to avoid drying out the chicken.

Can we use a different type of vinegar?

While balsamic vinegar is ideal for its sweet and tangy flavor, you could experiment with red wine vinegar or apple cider vinegar, adjusted with a bit of honey or sugar to balance the acidity.
