Nutty Crunchy Scotcheroo Bars
Scotcheroos are a delightful, no-bake dessert that has become a favorite in many households, known for their irresistible combination of flavors and textures. At their core, Scotcheroos feature a crispy, chewy base made from a mixture of crispy rice cereal, creamy peanut butter, and a sweet blend of sugar and light corn syrup. This base layer offers a satisfying crunch and a solid balance of sweetness and nuttiness, making it a hit among both children and adults. The simplicity of the ingredients and the ease of preparation, requiring a stovetop and no oven, add to their appeal, making them a popular choice for quick treats, potlucks, and school events.
What truly sets Scotcheroos apart, however, is their decadent topping – a rich, smooth layer of melted chocolate and butterscotch chips. This combination, when spread over the crispy base, creates a melt-in-your-mouth texture and a complex flavor profile that beautifully marries the chocolate's richness with the butterscotch's caramel-like sweetness. The result is a multi-layered treat that offers a symphony of flavors with every bite. Moreover, the versatility of Scotcheroos is a part of their charm; they can be easily customized with various add-ins or toppings, such as nuts, sprinkles, or a drizzle of white chocolate, allowing bakers to put their own twist on the classic recipe and making each batch uniquely delightful.
How to Make Scotcheroos
Assemble the following ingredients:
- Puffed Rice Cereal – you dont need to use a main brand cereal, any kind of puffed rice cereal will get you that crunchy base for the chocolate and butterscotch.
- Sugar – use white granulated sugar for this recipe to keep the color nice and clear for coating the rice cereal.
- Light corn syrup – while you can use dark corn syrup, we prefer light corn syrup since it will give help the puffed rice cereal stick together without adding any molasses taste or color.
- Creamy peanut butter – peanut butter will add a nuttiness to the puffed rice cereal and make it taste a bit like a peanut butter cup! See tips and tricks for allergy friendly alternatives.
- Milk chocolate chips – you can use milk or semisweet chocolate chips. The chocolate will combine perfectly with the butterscotch to give you that indulgent topping.
- Butterscotch chips – butterscotch chips can be found in the baking section at most grocery stores. They add a caramel flavor that helps cut through the milk chocolate and balance these scotcheroos flavor.
Use the Following Method
Make the syrup. Heat the sugar and corn syrup in a saucepan over medium heat. Once the mixture simmers remove it from heat and whisk peanut butter in.
Mix with cereal and press. Pour the cereal into a big bowl and pour the syrup over it. Mix well and press into a lined or oiled 9 x 13 casserole dish.
Melt Topping. Melt the chocolate chips and butterscotch chips in a bowl in the microwave stirring between 30-minute increments. Spread the chocolate over the cereal mixture, let cool for about an hour before cutting and enjoying!
Kitchen notes
Make it nut free. If you are taking this to a party and someone may have a nut allergy you can omit the creamy peanut butter or substitute sunflower seed butter.
Try other add ins. If you want these to be more colorful, try adding some sprinkles to the cereal treats when you stir in the syrup.
Cutting Bars. Use a sharp knife to cut the Scotcheroos. If the chocolate topping is cracking, let it sit at room temperature for a bit longer before cutting.
Storing. Store Scotcheroos in an airtight container at room temperature. They can also be frozen for longer storage.
Variations. Feel free to experiment by adding ingredients like vanilla extract, a pinch of salt, or using different types of cereal for a twist on the traditional recipe.
