Kitchen notes
Use different Cake Mix. Some people use yellow cake mix in similar recipes, but why would you give up that spice? If you do use a yellow cake mix, add 1 teaspoon of Pumpkin Pie Spice for the extra pumpkin flavor!
Pumpkin Pie Puree – If you want to up the spice you can use a pumpkin pie mix instead of pumpkin puree.
Don't Overmix – Overmixing the batter can make the cookies tough so make sure you mix until combined.
Use Fresh Puree – If you love a real pumpkin flavor try roasting your own pumpkin. Cut a baking pumpkin in half and scoop out the insides. spread a thin layer of oil on the pumpkin and roast inside-down on a baking sheet at 375 until a knife goes into the pumpkin exterior easily.
