Solid Homemade Movie Style Butter Popcorn

Our poor husband LOVES going to the movies. He'd pretty much live in a movie theater if he could. He loves everything about it- and we are kind of a movie grump.

Don't get us wrong- we love the movies- but it's always so crowded, you have to deal with listening to people chomp and fuss with food, if you have to get up to pee you can't pause the show- and it's so expensive! We know, we are a killjoy- but we love cuddling up with a good movie and a glass of wine at home.

Except…. the popcorn. We LOVE movie theater popcorn! It's hands down the best part of going to the movies, am we right??

That's why we are so excited to have a recipe for The Best Homemade Movie Style Popcorn. It is so addictive, easy, and good!

Our top secret? GHEE!

A lot of people (myself included) get a bit freaked out by the term ghee- but it is a type of clarified butter. It gives this popcorn a rich, salty, solid flavor- and is easy to cook with. We love ghee!

Hot tip- you can buy ghee for the BEST price at Trader Joe's. We buy a couple bottles at a time. It's good, and is SO good to cook with. We love it with broccoli, brussels sprouts, about everything!

To get the solid salt, you need to buy a small tin of popcorn salt. It is very, fine (so it spreads more easily) – and helps get the solid flavor! You can usually find popcorn salt with seasonings in your grocery store- sometimes it is also with popcorn kernels. If you can't find any, no worries! Pop some regular salt in a coffee grinder or food processor and pulse until fine.

You can easily add other flavors to this recipe- like add some truffle salt, rosemary, fresh grated parmesan cheese… the options are endless!

Ingredients

  • ½ cup popcorn kernels
  • 2 tbsp grapeseed oil
  • 1 tbsp ghee, clarified butter
  • 3 tbsp ghee/clarified butter
  • popcorn salt, pulse salt in food processor until fine if you don't have popcorn salt

Method

  1. In a tall pan, melt clarified butter with grapeseed oil on medium high heat.
  2. When ghee is melted and slightly foamy, add popcorn kernels.
  3. Place lid on pot, and gently swirl.
  4. When popcorn starts popping, melt additional butter in a small pan.
  5. When popcorn has slowed, and you hear less then three pops every two seconds, remove from heat (but leave in pan).
  6. When popping has completed fully, slowly pour popcorn into a large bowl.
  7. Add clarified butter by slowly drizzling it on to popcorn, then shake up popcorn and drizzle a little more on (so you get it spread out evenly).
  8. Add popcorn salt to taste.
